Gothel should have known, after the first time the king and Queen released lanterns on the birthday, that Rapunzel might have found it slightly suspicious (if Gothel had told her the exact birth date, which she really shouldn't have).

Well, it is a Disney animation. And the lantern-birthday thing is sort of important for her to figure out the whole thing. Except who is stupid enough to let that happen? Gothel seems like a smart, cunning lady, how did that go past her?
