If a werewolf takes Polyjuice, do they still transform during the full moon?

Hmm, that's a good question. I don't think they would. I think the polyjoice potion changes everything about the person taking it. When Harry changed into Goyle (Crabbe?) he didn't need his glasses anymore because the DNA strand (or chromosome, depending on how bạn want to look at it) no longer had whatever problem caused his weak eyesight. I'd assume that it would change whatever DNA strand hoặc chromosome the lycanthropy is attached to.
