However, Eleven and Clara are not in love, only relish the prospect of flirting with witty exchanges. :(

True, we never see the Doctor Kiss Rose when they're both of sound mind. We do however see the ends of adventures that we don't get to witness in full, and we hear recollections of the adventures that were never on screen.

The doctor says it in The giáng sinh Invasion, "Trouble's just the bits in-between." I think that suggests there is a lot of life that is lived off-screen. With Amy, there was a lot of affection and attraction and even sexual expression, yet losing Rose was so much harder - for the Doctor and the viewers - than losing Amy. I think not only was the tình yêu purer between them, but the connection was deeper.

I believe there is so much thêm that happened between these two that we couldn't see, and that relieves the grief for me.
