Because she put her own wants and needs before his. Telling him his wife had poisoned herself without clarifying that she didn't die was a horrible thing to do to him. His life revolved around his love for his wife and if he had the chance to save her out on that street he would have. With his love back in her life she might had gotten well again. Mrs. Lovett's selfish decision cost Sweeney the rest of his sanity and happiness and in the end his life and the lives of so many others. Would he have turned into a murderer with the love of his life back? I doubt it. He would have been too busy trying to get her well and get them a home and their child back.
