Why is it that tenzin hoặc his children don't own hoặc use a staff for flying ?

Here is Jinora on a glider from LOK 1.10: Turning the Tides. As to why Tenzin and the other kids don't use them I suppose it's a personal preference thing.

I'm pretty sure I saw the kids using them in the first series at some point.
If I had to guess as to why Tenzin doesn't use one, it could be to do with age. And they don't really seem to need one most of the time anyway, so that may be why we hardly ever see them.
